The ability for cinnamon to improve glucose, triglyceride, and LDL cholesterol levels has been supported through randomized,prospective, double-blind clinical trials- the best kind of trials. Cinnamon has been shown in vivo to create insulin sensitivity at the cellular level.  For those with pre-diabetes and diabetes, this means one thing- improved blood glucose levels.  But at what amount?  It has been shown that as little as 1 gram of cinnamon a day can improve blood glucose, triglyceride and LDL cholesterol levels, the biomarkers that give you a "report card" of your diabetes, or cardiovascular disease status.  Not to mention, it tastes...
